Ogura Toast Recipe

by Hadley Sui

Sink your teeth into this breakfast delicacy from Nagoya, Japan! Ogura Toast is a thick-cut (atsugiri) style toast that is topped with sweet red beans and butter. Start your day with an alluring blend of fluffy shokupan bread, smothered in ogura an (mashed sweetened red beans that have more definition than tsubu an) and topped with a perfect piece of butter and homemade matcha whipped cream.

Ogura Toast

Shokupan bread is ultra-soft with a crunchy outer texture when toasted that perfectly balances the moisture and consistency of the red beans and butter. Shokupan can be baked at home or sourced from Japanese grocery stores or bakeries such as Panya in New York City. Many store-bought shokupan loaves will not come pre-sliced, so you can cut it to your desired thickness. Combined with the light flavor of matcha whipped cream, this heavenly snack becomes a luxurious self care moment.

You can use these addicting red beans to garnish other desserts such as shaved ice, ice cream, or pancakes. Learn more about sweet red bean paste in this Bokksu Market blog!

Instructions:

  1. Cut a 2” thick slice of shokupan bread using a serrated knife.

  2. Place your slice (or slices) of toast on a sheet pan and spray the top of the bread with a light coating of butter cooking spray.

  3. Remove one stick of butter from the fridge and let sit at room temperature while you prepare the toast.

  4. Turn your oven on broil and toast your slice under the broiler for 30 seconds, or until the edges begin to brown. Watch closely as the broiler works fast! Remove from the oven.

  5. Top toast with a generous amount of ogura beans, centered on top of the toast. Alternatively, use anko red bean spread with butter from Bokksu Market.Kuze Fuku Anko Red Bean Spread With Butter

  6. Slice off a 1 tablespoon portion of butter. Center it on top of the toast.
  7. Make matcha whipped cream. In a stand mixer with a whisk attachment, beat 1 cup of heavy whipping cream, 1 tablespoon of sugar, and 1½ teaspoons of matcha powder on high speed for 3 minutes.
